NORTH BURGUNDY

 

Clotilde Davenne, bleached hair and leather jacketed, was the wine-maker at Brocard for seventeen years, and felt a growing desire to fulfil her dream of owning her own Domaine. After acquiring the Domaine in 1992, she built it up in her free time - hence the name “Les Temps Perdus” (“spare time” or “lost time”).  The vineyards are located in the South-West of Chablis on chalky soil, which she calls 'Jurassic Terroir'.  Her wines are tight, focused, with a mineral poise that makes these fantastic food wines.
